HOOK AND COOK SARDINE PASTA AND FOCACCIA BITES
Mix some Lemon juice and Ricotta to make a homemade spread for your focaccia slices. Serve it with pickled red onions and sardines on the top with some parsley and a couple of drops of olive oil. For an ultimate serving, grate some lemon zest over it on the plate.
If you like a more traditional approach, top your focaccia slices with fresh tomatoes, basil mayonnaise, black olives and sardines. Sprinkle with some olive or basil oil on the plate and serve.

Saute your fennel, garlic and capers for about 2 or 3 minutes on some olive oil, then add sardines to the pan. Stir a bit, add the tomato salsa, salt, pepper and a pinch of sugar. Cook for a couple of minutes until it boils, add some fresh basil and let it cool down. Mix the cooked pasta and salsa in the pan, with the addition of 2-3 tablespoons of leftover cooking water in.
